4. Configuración e instalación
4.1 Desembalaje
Carefully remove all packaging materials. Inspect the appliance for any shipping damage. Report any damage immediately to your retailer.
4.2 Colocación
This unit is designed for both built-in and freestanding installation. Ensure adequate ventilation around the unit. Avoid placing it in direct sunlight or near heat sources.
The reversible door design allows for flexible integration into various kitchen or dining area layouts.
4.3 Configuración inicial
- Install Shelves and Hooks: Place the stainless steel shelves and hooks as desired. The hooks are designed for hanging larger cuts of meat.

5. Operación
5.1 Panel de control terminadoview
The smart touch panel allows for precise control over temperature and humidity. Refer to Figure 4 for button functions.

5.2 Encendido y apagado

5.3 Temperature and Humidity Adjustment
- Utilice el Up (▲) y abajo (▼) arrows to adjust the desired temperature. The temperature range is 34°F to 77°F (1°C to 25°C).
- Presione el botón Configuración (⚙) to switch to humidity adjustment mode. Use the Up and Down arrows to set the desired humidity level (60-85%).
- Press and hold the C/F button (℃ / ℉) for 3 seconds to switch between Celsius and Fahrenheit display.
5.4 Iluminación interna
Presione el botón de luz (💡) once to turn the internal white LED lighting on or off. This enhances visibility of your aging products.
5.5 Advanced Air Cooling & Circulation System
The unit features an advanced air cooling and circulation system with a recirculating fan for 24-hour frost control and an inverter compressor for fast cooling and low vibration, ensuring precise conditions for aging.

5.6 Aging Various Foods
The Ca'Lefort Dry Ager is versatile and can be used for various foods. Here are general guidelines:
- Beef Aging: Temperature: 34°F-39°F (1°C-4°C), Humidity: 75%-85%, Time: 14-45 days.
- Lamb Aging: Temperature: 34°F-39°F (1°C-4°C), Humidity: 75%-85%, Time: 7-21 days.
- Fish Aging: Temperature: 34°F-36°F (1°C-2°C), Humidity: 80%-85%, Time: 5-10 days.
- Cheese Aging: Temperature: 46°F-59°F (8°C-15°C), Humidity: 80%-85%, Time: 30 days or more.

6. Mantenimiento
6.1 Limpieza del interior
Regularly clean the interior of the dry ager with a mild detergent and soft cloth. Ensure the unit is unplugged before cleaning. The stainless steel shelves and tray are removable for easier cleaning.
6.2 Water Tank and Filter Maintenance
The water tank should be refilled with distilled water as needed. The integrated filter cartridge helps maintain water quality and should be replaced periodically according to usage. To remove the water tank, press the safety latch and slide it out.
